Multi-Flavour Savoury Muffins

Makes 8 muffins 

Ingredients 

  • 120 g all-purpose flour 
  • 1 egg 
  • 100 g milk or plant-based milk 
  • 35 ml Olitalia Classic extra virgin olive oil 
  • 25 g grated Parmigiano or pecorino cheese 
  • Salt, to taste 
  • Freshly ground black pepper, to taste 

Flavour options 

  • Black olives and capers 
  • Cherry tomatoes and dried oregano 
Recipe

Method 

  1. Preheat the oven to 180°C and line a muffin tray with paper cups. 
  2. In a bowl, combine the flour, egg, milk, olive oil, grated cheese, salt, and pepper. 
  3. Whisk gently until you obtain a smooth, lump-free batter. 
  4. Divide the batter into two bowls if you’d like to prepare different flavours. 
  5. Fold in your chosen fillings—black olives and capers in one, cherry tomatoes and oregano in the other. 
  6. Spoon the batter into the prepared muffin cups. 
  7. Bake in a static oven for about 25 minutes, or until golden and set.
