Rosemary Hummus

Serves 3–4 

Ingredients 

  • 200 g cooked green peas 
  • 240 g cooked chickpeas 
  • 1 garlic clove 
  • 2 tbsp Olitalia rosemary-flavoured extra virgin olive oil 
  • 1 tbsp tahini (optional) 
  • Salt, to taste 
  • Freshly ground black pepper, to taste

Method 

  1. Add the chickpeas and green peas to a blender. 
  2. Add the garlic clove, salt, pepper, and tahini (if using). 
  3. Pour in the rosemary-flavoured olive oil. 
  4. Blend until smooth and creamy. 
  5. If needed, add 1 tablespoon of water at a time to achieve a silkier texture. 

Food Plating 

Spoon the hummus into a serving bowl. Garnish with a few whole peas, a generous drizzle of rosemary-flavoured olive oil, and fresh rosemary leaves. 

Serve with warm bread, crackers, or breadsticks.
